International Waffle Day

On Friday, March 24th we celebrate International Waffle Day! What better way to celebrate this tasty holiday than with the Fried Chicken and Waffles at Grand Lux Cafe. The Fried Chicken and Waffles entree is a golden fluffy waffle sprinkled with powdered sugar, topped with crispy fried chicken strips, freshly toasted pecans and decadent maple-butter sauce. This entree is the best balance of sweet and savory.

Waffle Day began in Sweden as Våffeldagen, actually due to confusion between the Swedish “vårfrudagen” meaning “Our Lady’s Day” which falls on the same date. The day historically marks the beginning of spring and is celebrated by the eating of many waffles.

New Menu Items

The Cheesecake Factory has been rolling out new items to their ever expanding menu. Last week I was invited to a taste their newest offerings. Two words, absolutely delicious! Check out the new menu items and plan your next visit.

New Menu Items

Cocktails: Cucumber Mojito, Blood Orange Martini, Irish Coffee Manhattan and Espresso Martini.

Small Plates & Snacks: Korean Fried Cauliflower, “Nashville Hot” Chicken Nuggets, Chicken Taquitos and Truffle-Bacon Grilled Cheese Sticks.

Salads: Chicken, Mango and Avocado Salad. (My favorite. It is amazing!)

Skinnylicious: Skinnylicious Chicken Pot Pie.

Specialties: Truffle-Honey Chicken, Crispy Pineapple Chicken and Shrimp, Seared Ahi Tuna, Carne Asada Steak Medallions, Pasta Napoletana, Chicken Riesling and Chicken Parmesan “Pizza Style.”

If you want to make my favorite dish at home, you’re in luck. Below is the recipe. PS: this salad is big and can easily serve 2. Enjoy!

Chicken, Mango and Avocado Salad

1  3 oz. Boneless, Skinless Chicken Breast
1/8 tsp. Kosher Salt                                                                                      
Pinch of Ground Black Pepper
1-1/2 tsp. Teriyaki Sauce*
2 oz. Romaine Lettuce, cut into 1” pieces
2 oz. Butter Lettuce, cut into 1” pieces
1 oz. Mixed Baby Lettuce
1/2 oz. Green Cabbage, sliced thin 1/8”
2 oz. Fresh Pineapple, cut into 1/2″ pieces
1 oz. Fried Wonton Strips (optional)
1 oz. Carrots, julienned
1 oz. Red Peppers, julienned
1 oz. Cucumber, partially peeled, cut in half lengthwise, seeded, sliced thin 1/8
1-1/2 oz. Asian Sesame-Ginger Dressing*
1/2 oz. Balsamic Vinaigrette*
3/4 tsp. Honey
3/4 tsp. Orange Juice, freshly squeezed
1/2 ea. Avocado, medium, cut into 1/2” pieces
2 oz. Mango, peeled, seed removed, cut into 1/2” pieces
1 oz. Grape Tomatoes, cut in half
1/4 oz. Almonds Slivers, toasted
1/2 oz. Fried Wonton Strips (optional)
3/4 tsp. Mint, sliced thin 1/8”
1/4 tsp. Black/White Sesame Seeds, toasted

1. Season both sides of the chicken breast with salt and pepper.
2. Cook the chicken (grill or sauté) until done, basting several times with teriyaki sauce.
3. Pour the Asian Sesame-Ginger Dressing, Balsamic Vinaigrette, honey and orange juice into a small mixing bowl.  Stir the ingredients together until thoroughly and evenly combined.
4. Place the lettuces, green cabbage, pineapple, fried wontons (optional), carrots, red pepper, cucumbers and mango into another mixing bowl.
5. Pour the dressing over and around the salad ingredients and gently toss together.
6. Place the salad mix evenly into a cold bowl, mounding it as high as possible.
7. Sprinkle the avocado and mango pieces all over the salad.
8. Place the grape tomatoes around the base of the salad.  Sprinkle the almonds evenly over the salad.
9. Slice the chicken breast into three pieces and onto the lower portion of the salad.
10. Mound the fried wontons (optional) onto the center of the salad.
11. Sprinkle the sliced mint evenly over the salad.
12. Sprinkle the sesame seeds evenly over the salad.

Serves 1

*Your favorite recipe or any one of the many recipes in cookbooks or on the internet may be used. Excellent sauces and dressings of this type are also available in most major supermarkets and specialty stores.

Breakfast Night

The end of February is here. Did you know this month was “Hot Breakfast Month?” My friends at Krusteaz and T-Fal sent me a box full of waffle, pancake, muffin mixes and more. My month has been filled with wholesome treats that make perfect meals, treats and snacks for every meal of the day.

To end this month with a bang, tonight I had a #BreakfastNight dinner. This was such a fun process that included Krusteaz Belgian Waffle Mix and Wild Blueberry Muffin Mix, along with a few other breakfast favorites.

National Sticky Bun Day

The most delicious day of the year is finally here. This year’s National Sticky Bun Day is on February 21! One of my favorite treats is the Warm Sticky Bun Bread Pudding from the Grand Lux Cafe. This glorious delight is perfectly baked with all the right sticky. My friends and Executive Chef from Grand Lux Cafe shared their recipe with me and now I share the love with you.

Warm Sticky Bun Bread Pudding Recipe


1 lb. of Brioche or Challah Bread
8 oz. (2 sticks) Melted Butter
1/3 Cup packed Brown Sugar
1/3 Cup Sugar
1 Tsp. Cinnamon
1/4 Tsp. Nutmeg
1/4 Tsp. Salt
2 Cups Milk
2 Cups Heavy Cream
4 Eggs
4 Egg Yolks
1/2 Cup Sugar
1 Tsp. “Good” Vanilla Extract

Directions, by number:

1. Cut the bread into 1” cubes.
2. Place the bread cubes into a large mixing bowl.
3. Combine the butter, sugars and spices in a mixing bowl, whisking to combine completely.
4. Pour the mixture over the bread, tossing to fully coat the bread cubes with the mixture.
5. Spread out into a 9×13 baking dish.
6. Bake at 350° for 15 minutes, or until golden brown.  Be sure to stir the bread cubes once or twice while toasting.
7. While the bread is toasting, make the custard.
8. Whisk all ingredients together until evenly combined.
9. Once the bread has toasted, remove the pan from the oven.
10. Pour the custard over the bread cubes.
11. Allow the mixture to sit for 10-15 minutes before cooking.
12. Cover the pan with aluminum foil and place into a 300° oven.
13. Bake for 20 minutes.
14. Remove foil from pan and continue to bake for an additional 20-25 minutes, or until light golden brown and the custard has set.  You can test this by inserting a paring knife into the center of the pudding. If the knife comes away clean, or with very little pudding clinging to it, the pudding is ready.
15. Allow the pudding to cool for at least 30 minutes before serving.
16. To serve:Top the pudding with toasted pecans and warm caramel sauce. Serve with either vanilla ice cream or crème anglaise.
